The QuEEn’s Pesto Chicken Pasta

A lot of the time during the week I make what I have on hand, I had chicken breast left over and pasta so I whipped up a quick chicken pesto pasta meal.

The Queen’s Chicken Pesto and PastaIngredients:

  • 2 chicken breast

(chicken tenderloins work as well)

  • Pasta penne noodles

(or bow ties or linguine really any pasta you like)

  • Tomato
  • Pesto
  • Complete Seasoning
  • Ground black pepper
  • Oil
  • Parmesan Cheese

Directions:

Season chicken with seasoning and pesto, let sit for 30 minutes to an hour depending on how much time you have. Boil noodles. Grille chicken breast, cut up chicken breast (in pan or out). Cut and dice tomato and add to chicken breast, coat chicken breast with juices and seasoning. Drain pasta, adding a tablespoon of oil and pesto while hot with salt, pepper, and parmesan cheese. The pesto amount should be to your preference. Add chicken and tomatoes to pasta and mix. If there is not enough liquid you can add a little chicken broth with pesto mixed. Top with Parmesan cheese. Voila, a simple and quick meal during the week!
