The Queen’s Stuffed Chicken

Ingredients

 Chicken breast (I had a 4 pack)

1 package of soft cream cheese (4 ounces)

 Mayo 

 Butter 

 1 cup of cheddar cheese 

 ½ cup of broccoli 

 ½ cup of spinach 

 ½ tomato diced

 Seasoning (I use complete seasoning, montreal steak seasoning) 

 Herbs (I buy a poultry pack from grocery store)

Instructions:

Season chicken breast set aside.  Cut up broccoli (frozen or fresh), cut up spinach, cut tomato. Add 2 spoons of mayonnaise, a handful of shredded cheddar cheese, salt and pepper with the cream cheese and mash/smooth it out. Separate into 2 halves, in one half add spinach and the other half add broccoli add the tomato if you like tomatoes. Slit each chicken breast at the top like a pocket. Spoon the filling into pocket, add a layer of shredded cheese, close opening with toothpicks. Repeat this step for other chicken breast. Place chicken breast in baking dish. Melt ¼ butter and drizzle on the top of chicken. Place in oven uncovered for 375 degrees for 35- 45 minutes until chicken is done. Take the juices from the chicken and pour onto chicken. Remove thyme and herbs from chicken, Voila! Plate your chicken and enjoy!
